498 to go...

Oh-so recently I have found a cup cake cookbook.
It has 500 recipes. No joke.
My goal over the summer is to maybe make them all. Yeah. Good luck with that one Meg.
Tonight’s recipe was peanut butter cupcakes.

Yes, I’ve come a long way from the ‘salty cookies’ of 06.
They are from heaven and super easy to make.
Don’t fret. I’m sharing the recipe.
Peanut butter cupcakes
For the cupcakes                                                                             
1 cup (2 sticks) sweet butter, softened                                 
1 cup superfine sugar                                                                    
2 cups flour                                                                                        
4 eggs                                                                                                  
1 cup peanut butter (crunchy or smooth)                            
For the Frosting
½ cup peanut butter (crunchy or smooth)
½ cup (1 stick) sweet butter, softened
2 tsp. vanilla extract
2 cups confectioners’ sugar
2 tbsp. milk
Preheat the oven to 350. Bake for 15 minutes. Makes 1 and ½ dozen! I added 2 tbsp. of coco powder to the frosting to make it fudgeish, and I added chocolate chips to the cupcake batter.
I’ll be at the gym bright and early because of these babies. But, they are oh-so worth it.
